Tis’ the season for pumpkin spice everything, right?! These pumpkin pie pancakes are the perfect weekend breakfast! They are fluffy and sweet with the perfect amount of spice! I love to serve them with crispy bacon and maple sausage. They are definitely a fall favorite in our home!
Pumpkin Pie Pancakes

Ingredients
- 1 1/2 cups of flour
- 3 tsp baking powder
- 2 TBSP light brown sugar
- 2 tsp pumpkin pie spice
- 1 tsp salt
- 2 tsp vanilla extract
- 1 cup milk
- 1 cup pumpkin puree
- 2 large eggs
Optional toppings- walnuts or pecans, whipped cream, butter, syrup
Directions
In a large bowl mix together flour, baking powder, brown sugar, salt, and pumpkin pie spice. Then stir in vanilla, milk, eggs, and pumpkin puree. Mix until combined.
Heat a large skillet over medium heat. Coat with cooking spray or butter. Pour pancake batter into skillet and cook until bubbles start to form in batter, about 3-5 minutes. Flip and cook the other side, pancakes should be golden brown. Repeat with remaining batter.
Serve pancakes immediately with desired toppings!!
